As we start to make steps towards 'normalcy, it's still hard to wrap my head around the fact that the entire world more or less, came to a screeching halt. One of my many takeaways (and by the looks of things on social media, everyone else's too), is how much joy cooking provides. I can't think of a time when the luxury of making chocolate cake on a whim at 2pm on a Tuesday was even possible. Or losing track of time pouring through food blogs and cookbooks (Barefoot Contessa, I've missed you babe!). Work or kids or both was always taking precedent. The kitchen is indeed my happy place, as cooking feels incredibly calming, thrilling and satisfying all at the same time. With all that said, my absolute favorite discovery and new go-to dish on a weekly basis is this salad. I share this recipe with you because it really is THAT good, but in actuality, doesn't even really count as cooking.
ps. This makes the BEST filling for sandwiches - especially for a day at the beach. I like to use country bread cut a bit thicker than a typical slice. Add a slice of fresh tomato sprinkled with salt.

Chickpea, Avocado and Feta Salad
1 can chickpeas rinsed and drained
1 avocado pitted, and chopped
1/3 cup chopped cilantro
2 tablespoons green onion
1/3 cup feta cheese
Juice and zest of 1 lime
Salt and black pepper to taste
1 T olive oil (optional)
Put everything into a bowl and gently toss.
